About food cost. The package price covers your chef’s time and skill. Food is billed separately on top of it — you set the budget and your chef shops to it, typically $500–$600 for a party of ten, though it varies with the menu and the market.
Two exceptions worth knowing: Dinner for 2 already includes $150 toward food in its price, so there is nothing extra to budget. Tasting Menu for 2 is billed separately like the rest, but for two people the usual starting point is closer to $300.
